Most varieties of garlic will either have been harvested already or will be ready to harvest in December. Only a few varieties need to stay in the ground for January or February harvesting. Check the size of the bulbs by digging down and carefully brushing the soil from the bulb.

Stop watering 2 weeks before harvest so that the heads come out of dryish soil. This makes them easier to dry. Hang the heads in bunches in an airy environment out of full sun until the soil is flaking off, then brush with a soft brush, and remove the top layer of skin so that the heads are clean. Trim the stem leaving at least 4 centimetres and cut the roots as close to the base as possible.  Store in a cool, dark, airy place.
